Amish Oatmeal Cake

DIRECTIONS - INGREDIENTS
- CAKE:
- 1 cup rolled oats
- 1 1/4 cups boiling water
- 1/2 cup butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 2/3 cup flour
- 1 teaspoon vanilla
- FROSTING:
- 6 tablespoons butter, melted
- 1/4 cup milk
- 1 cup brown sugar
- 1/2 cup nuts, chopped (if desired)
- 1Mix oats and boiling water together; set aside for 20 minutes. Cream butter and sugars together thoroughly. Add eggs, one at a time, beating well after each one. Blend in oatmeal mixture.
- 2Sift together remaining dry ingredients. Fold into batter. Stir in vanilla. Pour into a greased and floured 9” x 13” baking pan. Bake at 350 degrees for 30-35 minutes.
- 3After baking, but before cake cools, mix frosting ingredients together thoroughly and spread the frosting over cake and broil about 2 minutes or until it browns. Watch carefully as it burns easily!!
