My First Attempts to Amish Baking

Amish Oatmeal Cake

DIRECTIONS - INGREDIENTS

  • CAKE:
  • 1 cup rolled oats
  • 1 1/4 cups boiling water
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 2/3 cup flour
  • 1 teaspoon vanilla
  • FROSTING:
  • 6 tablespoons butter, melted
  • 1/4 cup milk
  • 1 cup brown sugar
  • 1/2 cup nuts, chopped (if desired)

    Mix oats and boiling water together; set aside for 20 minutes. Cream butter and sugars together thoroughly. Add eggs, one at a time, beating well after each one. Blend in oatmeal mixture.

    Sift together remaining dry ingredients. Fold into batter. Stir in vanilla. Pour into a greased and floured 9” x 13” baking pan. Bake at 350 degrees for 30-35 minutes.

    After baking, but before cake cools, mix frosting ingredients together thoroughly and spread the frosting over cake and broil about 2 minutes or until it browns. Watch carefully as it burns easily!!
